As you are aware, trans-fatty acids have now been banned from foods or oils used in cooking foods. We can’t metabolize trans-fatty acids very easily. However, trans-fatty acids are more stable than are cis-fatty acids. Generally, biologically important molecules are in the most stable form. Fully explain why we metabolize (i.e., synthesize and breakdown) the less stable cis-fatty acids rather than the more stable trans-fatty acids.
